    Recipe Introduction


    We've had a "bumper" tomato crop this year, and I was looking for new recipes to utilize all of my tomatoes. I've made salsa, I've frozen tomatoes for my winter soups, stews, & chili, so I was excited to get another recipe to use my tomatoes!

    List of Ingredients




    1/2 bushel (26 lbs.) tomatoes
    6 cloves garlic
    6 medium onions chopped
    1 cup parsley, chopped
    1/2 cup packed brown sugar
    1/4 cup salt
    3 Tblsp. oregano
    2 Tblsp. basil
    1 tsp. pepper

    Recipe



    Cut tomatoes into big chunks. Boil for 15-20 minutes. Then run through a blender...but not to puree. Pour through a sieve to rid the seeds and peelings - save the juice. In a BIG pot, pour the juice and rest of the ingredients and cook for 4 hours.

    Pour into canning jars and water bath for 15 minutes.
