    2 cups old fashioned oats
    1 cup chopped almonds
    1 cup shredded coconut
    1/2 cup toasted wheat germ
    3 Tblsp. unsalted butter
    2/3 cup honey
    1/4 cup light brown sugar
    1-1/2 tsp. vanilla
    3/4 cups dried fruit (cranberries, apricots, whatever you like)

    Preheat oven to 350. Butter an 8 x 12 baking dish and line with parchment paper. Tos the oatmeal, almonds and coconut together on a baking sheet and bake for 10 minutes, stirring occasionally until lightly browned. Transfer mixture to large bowl and add wheat germ.

    Reduce oven to 350 degrees.

    Place the butter, honey, brown sugar, vanilla and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oat mixture. Add the dried fruit and stir well.

    Pour into the prepared pan. Wet your fingers and lightly press the mixture evenly in the pan. Bake for 25 minutes until light golden brown. Cool for at least 2-3 hours before cutting into squares.
