    Broccoli Cheese Soup

    Another great soup recipe!!

    List of Ingredients

    1 stick butter
    1 chopped onion
    1 lb. bag frozen chopped broccoli (thawed)
    2 stalks chopped celery
    1 cup carrots (sliced julienne style)
    3 cans chicken broth (or 1 box)
    2 cans cream of potato soup
    1 can cream of celery
    16 oz. sour cream
    1 lb. velveta cheese

    Recipe

    In large saucepan, saute 1 chopped onion, 1 lb. bag of chopped broccoli, 2 stalks chopped celery and 1 cup julienne carrots. Add 3 cans chicken broth and simmer for 30 minutes. After 30 min., add 2 cans cream of potato soup, and 1 can cream of celery. Simmer for 10 min. Add 16 oz. sour cream and 1 lb. velveta cheese (cut into cubes). Heat until cheese is melted. YUM!

    (* to make this recipe slightly healthier, I cut the sour cream amount to 8 oz.-- couldn't tell that it made any difference to the taste).
