    Lemon Crescent Cookies

    LEMON CRESCENT COOKIES

    1/2 tsp salt (I don't use)
    1 cup sugar
    4 egg yolks
    1/2 cup butter ( I use unsalted)
    juice & rind of one lemon
    2 Tabls shortning
    4 egg whites
    1 1/4 cup flour
    chopped walnuts
    icing sugar

    Cream together butter, shortning, sugar & salt add egg yoks, lemon juice & rind & beat until fluffy
    Beat egg whites until stiff, fold into egg yolk mixture along with the flour very gently.
    Spread into a jelly roll pan 10x15
    Sprinkle with chopped walnuts
    Bake in preheated 350 oven until just starting to brown along the outside.
    Remove from oven, right away with a glass cut into moon shape cookies & place on clean cookie sheet. Place back in oven & continue baking until firm & lightly brown.
    Cool on wire racks when cooled sprinkle with icing sugar.

    I hope the directions are clear it is very easy to do just hard to explain. They have a nice lemon flavour.
