    List of Ingredients




    1 large onion, chopped
    1 green pepper, chopped
    3-4 cloves garlic, minced
    2 ribs celery, sliced
    1 Tablespoon butter
    1 Tablespoon olive oil
    1 lb. smoked sausage, cut into �� slices
    3 cups chicken stock
    2 cups uncooked long grain white rice
    � cup chopped green onions, optional
    1-14.5-15 oz. can diced tomatoes, do not drain
    1 Tablespoon dried parsley flakes
    1 Tablespoon Worcestershire Sauce
    1 Tablespoon Red Hot Sauce
    1 teaspoon Tony Chachere�s Creole seasoning
    Black pepper to taste

    Recipe



    Saut� the onion, green pepper, garlic and celery in butter and oil until crisp tender. Add remaining ingredients and pour into 3 qt. baking dish. Cover with foil. Bake in preheated 375 oven for 45-60 minutes, or until rice is tender. Stir twice during cooking.

    *I do this in a 4 qt. roaster oven/slow cooker on the counter top.

    I get the Tony Chechere's Creole seasoning at Super Walmart
