    List of Ingredients





    1 pie crust 2 egg yolks, beaten
    1 cup sugar 4 oz cream cheese, softened
    3T cornstarch 1-2t grated lemon peel
    1 cup water 1/2 cup whipping cream, whipped
    1/3 cup lemon juice

    Recipe



    Heat oven to 450 and bake crust. In saucepan, combine sugar & cornstarch. Mix well. Stir in water, lemon juice, & yolks. Turn on heat. Cook over med. heat until mixture thickens & boils. Boil one minute. Lower heat. Add cream cheese, lemon peel, stirring until cheese is melted and smooth. Remove from heat. Cool. In large bowl, beat cream (1/2 cup), fold into mixture. Pour into crust. Cover with plastic wrap. Refrigerate overnite. Garnish with additional whipped topping if desired.
