Mediterranean Beef Stew
Got this recipe at a "grandmother's tea" before my wedding. People rave about it. Unusual variety of ingredients but excellent results.
List of Ingredients
- 3 medium potatoes, peeled and cut into 1 inch cubes-about 3 cups
- 4 medium carrots, peelsed and sliced into 1 inch pieces
- 2 medium onions, cut into chunks
- 1 lb of beef stew meat, cut into 1 inch cubes
- 8 oz can of tomato sauce
- 1 cup dry red wine
- 2 tablespoons of wine vinegar
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1/4 cup raisins
- 1 inch stick of cinnamon
- 1/2 teaspoon of whole cloves
- 1 bay leaf
Instructions
- Place meat and vegetables in crock pot
- Combine other ingredients in bowl and pour over meat in cooker
- Cover and cook on high heat for 5-6 hours or low heat for 10-12 hours utnil tender
- Remove stick cinnamon, cloves and bayleaf before serving
- Makes 5-6 servings.
- I substituted ground cinnamon and cloves for whole spices 1/4 tsp each
