    Rhubarb Upside Down Cake

    1-1/4 cup flour
    1-1/2 teaspoon baking powder
    1-1/2 cup sugar
    3 cup rhubarb
    1/3 cup shortening
    1 egg
    1 teaspoon vanilla
    1/2 cup milk

    Recipe



    Mix dry ingredients.
    Combine 1 cup sugar and rhubarb, cook over medium low heat, 5-8 minutes.
    Spread in 8 inch square pan.
    Beat shortening and 1/2 cup sugar then beat in egg and vanilla.
    Add dry ingredients alternately with milk.
    Spoon in mounds over rhubarb, spread as even as possible.
    Bake at 350 for 35 minutes.
    Cool in pan 5 minutes and invert on plate.
