    Garlic Cheese Grits Souffle

    2 T butter
    2 minced garlic cloves
    4 c. water
    3/4 t. salt
    1/2 t. pepper
    1/4 t. dry mustard
    1/4 t. ground tumeric
    1 cup uncooked grits

    4 large eggs, separated
    2 cups shredded sharp cheddar cheese
    1/8 t hot sauce
    1/4 t cream of tartar
    paprika

    Recipe



    - Melt butter in a medium saucepan over medium heat; add garlic, and saute until tender. Stir in 4 cups water and next 4 ingredients; bring to a boil. Gradually stir in grits. Reduce heat, and simmer, stitting occasionally, 15-20 mintues or until thickened. Remove from heat; stir in egg yolks, cheese and hot sauce.
    - Beat egg whites and cream of tartar at high speed with a mixer and until stif peaks form. Fold one-fourth into grits. Fold grits into remaining whites. Pour into greased and floued 2-quart souffle dish; sprinkly with paprika
    - Bake at 400 for 45 min.
