    List of Ingredients




    4 head garlic
    1/4 cup olive oil
    6T butter
    4 leek, chopped
    1 onion, diced
    6T flour
    4 c. heated veggie stock
    1/3 cup dry sherry
    1 cup heavy cream
    lemon juice

    Recipe



    1. Preheat oven to 350
    2. Cut off top quarter inch of each garlic head.
    3. Place the garlic heads in a small shallow baking dish.
    4. Drizzle oil over.
    5. Bake about one hour.
    6. Press cloves to release and chop the garlic.

    1. Melt butter in heavy saucepan over medium heat.
    2. Add garlic, leeks, and onion and saute until onion is translucent, about 8 minutes.
    3. Reduce heat to low, add flour and cook 10 minutes.
    4. Stir in hot stock and sherry.
    5. Simmer 20 minutes.
    6. Puree in batches and return to pot.
    7. Add cream and summer until thickened, about 10 minutes.
    8. Add lemon juice to taste.
