Tomato Spinach Soup

1 can veggie stock
1/4 cup olive oil
2 cloves minced garlic
1 cup chopped onions
28 oz. can crushed tomatoes
15 oz. can diced tomatoes
10 oz. pakage fresh spinach leavesRecipe
- Cover the bottom of the soup pot with olive oil.
- Saute garlic and onions in olive oil.
- Add veggie stock and bring to slow boil
- Add in both cans of tomatoes
- Allow soup to cook for 5 minutes.
- Add spinach and allow to reduce.
