Parmesan Roasted Potatoes

3 pounds baking potatoes
3 T olive oil
1/2 cup parmesan
2 T fresh parsleyRecipe
1. Preheat oven to 450.
2. Oil in a roasting pan with olive oil.
3. Cut potatoes into cubes.
4. Boil potatoes for 5 minutes.
5. Stir potatoes with olive oil and salt.
6. Spread potatoes in roasting pan and roast 20-25 minutes. Turn often.
