4 large artichokes
Lemon Wedges
1/2 cup grated Parmesan cheese
1/4 cup Italian breadcrumbs
2 pressed garlic cloves
4 t olive oil
Recipe
- Cut off stem ends os artichokes will sit upright. Trim about 1/2 inch from artichoke tops. With scissors, trim away one-fourth of each outer leaf. Rub leaf edges with lemon. Spread leaves gently to read center. Snip around fuzzy thistle and remove with a spoon.
- Stir together cheese and next 3 ingredients; spoon evenly between artichoke leaves. Drizzle evenly with oil.
- Pour in water to a depth of 1 inch. Arrange artichokes over vegetables. Bring to a boil over medium heat. Cover, reduce heat, and simmer 30 minutes.
