This cake is DELICIOUS! A friend of my Mom's made it. I think the recipe came from SL mag.
Coconut Sheet Cake
List of Ingredients
Cake:
3 large eggs
1 8oz. sour cream
1/3 cup water
1 8.5 oz. can cream of coconut
1/2 tsp vanilla extract
1 pkg White cake mix
Icing:
8 oz. pkg. cream cheese softened
1/2 c. butter or marg. softened
3 Tab. milk
1 tsp. vanilla extract
1 16 oz. box powered sugar, sifted
1 7 oz. pkg sweetened flake coconut �Frozen is best�
Recipe
To Make CAKE:
Beat eggs at high speed with an electric mixer for 2 min. Add sour cream,
1/3 cup water, cream of coconut and vanilla, beating well after each addition. Add cake mix, beating at low speed till well blended. Beat at high speed for 2 min. Pour into greased and floured 1/3x9x2 pan. Bake at 325 for 40-45 min.
Coconut Cream Frosting
Beat cream cheese and butter at med. speed with electric mixer until creamy. Add milk, and vanilla beating well. Gradually add sugar beating until smooth. Stir in coconut. Spread on cake.
Keep in fridge.
