    1-2 T butter
    1 onion, chop coarse
    2 firm pears, peel, core, slice thickly
    2 t sage or 2 T fresh sage
    4 chicken breasts
    2 T grey poupon or similar mustard
    2 T maple syrup - the real stuff
    salt & pepper

    Here is the Chicken with Pears Recipe.
    I think the spices would go just as well with pork as chicken. Might be fun to try it with apples/pork/cinnamon/thyme. The preparation flows nicely in this recipe, nothing rushed but no waiting around for something to do except when baking - which gives enough time to make a salad.



    Preheat oven to 450 degrees

    In cast iron or other heavy pan heat about
    1 T butter and cook onion till soft, about 10 minutes over medium heat, season with salt & pepper. Add pears, cook 5 more minutes. Sprinkle with sage. Remove mixture from pan.

    Season chicken(Pork chops) with salt & pepper. Add them to pan with a bit more butter,if needed,and cook 5 minutes for chicken perhaps 10-15 for pork till browned on one side. Turn over.

    Combine mustard and maple syrup and spread on chicken/pork on uncooked side. Return onion/pear mixture to pan, tucking some under the meat.

    Bake in oven for 15 minutes maybe longer with pork. Serve meat with pear/onion mixture. I love it with mashed potatoes, but then I love mashed potatoes with anything.
