    TEXAS FRESH APPLE CAKE

    List of Ingredients


    • 2 C. flour
    • 1 t. baking soda
    • 1/2 t. salt
    • 1 t. cinnamon
    • 1 1/4 C. oil
    • 2 C sugar
    • 3 eggs
    • 2 t. vanilla
    • 3 C. grated apple
    • 1 1/4 C. chopped pecans
    • 6 T. unsalted butter
    • 2 T. milk
    • 3/4 C. brown sugar
    • 1/2 C. coconut
    • 1/2 C. chopped pecans


    Instructions


    1. Combine flour, soda, salt and cinnamon in a small bowl and set aside.

    2. In a large mixing bowl, beat oil and sugar together until well-blended. Add eggs and beat until eggs are totally incorporated and mixture is a light-lemon color.

    3. Mix in vanilla, then add flour mixture, grated apple and pecans. Mix well.

    4. Pour into a 10 in. springform tube pan or a bundt pan that has been sprayed with oil.

    5. Bake for 50-55 min. at 350 degrees. Cake is done when toothpick inserted in center of cake comes out clean.

    6. When cool, remove from pan, place on serving tray and top with topping.

    7. For Topping - Combine butter, milk, brown sugar, coconut and pecans in a medium saucepan. Bring to a boil and boil for 1 minute.

    8. Pour over top of cake and allow to cool before serving.
