    4 eggs separted - beat whites until very stiff . Trick to good egg whites is no oil or water residue in the bowl. Beat yolks with 1 tablespoon vanilla - 2 tablespoons sugar and 4 cups of milk whole or skim your choice

    Fold in egg whites and sprinkle top with nutmeg and add liquor if you go for that sort of thing
