    Holiday Eggnog

    7 cups fat free milk, divided
    1 pkg. (4-serving size) JELL-O Brand Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling
    1 cup low fat evaporated milk
    2 tsp. rum extract


    Holiday Eggnog

    POUR 2 cups of the milk into large bowl. Add pudding mix. Beat with wire whisk 1 minute. Add remaining 5 cups milk, evaporated milk and extract. REFRIGERATE until ready to serve. Makes 8 (1-cup) servings.

    I've got to give credit for this recipe to one of those great diabetic websites. Wasn't going to use brand names I was going to generic everything out and this thing came along and swiped it. Don't know if I'm violating any copyrights or anything.
    Anyway, the bottom of the recipe that I didn't copy says you can substitute the other versions of pudding mix. I copied this for a friend who is allergic to eggyolks and also for us, because it was sugar free.
