    Sweet Potato Fritters (with Dipping Sauce)

    Ingredients :

    250 gm sweet potato, (peeled)
    1/2 cup self-raising flour
    1/2 cup rice flour
    1 tsp sugar
    1 pch salt
    1 cup thick coconut milk
    vegetable oil
    finely chopped red chilli
    1 x clove garlic - chopped finely
    1 tsp sugar
    1 tbl rice vinegar
    2 tbl water
    3 tbl fish sauce

    Method :
    The North Coast of NSW is perhaps Australia's premier sweet potato growing areas. Sweet potato, or kumara, is a versatile vegetable, so why not try this great recipe.
    Fritters: Grate sweet potato and squeeze out excess moisture. Mix flour, sugar and salt. Stir in sweet potato.
    Heat oil, and spoonful of mixture for a couple of minutes each side, then drain and serve with dipping sauce.
    Why not try adding chicken pieces, green prawns. Serve with drinks.
    Pound chilli and garlic to a paste, and add the rest of the ingredients.
