CHOCOLATE CHERRY
UPSIDE-DOWN CAKE.

1 tbsp cold water
1 tbsp cornstarch
1/4 tsp almond extract
1 can(21 oz) cherry pie filling
1 2/3 cup all pourpose flour
1 cup sugar
1/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 cup water
1/3 cup vegetable oil
1 tsp vinegar
1/2 tsp vanilla
Heat oven to 350. In a medium bowl combine the cold water,cornstarch and almond extract. Stir in chery pie filling,blend well. Spread evenly on bottom of ungreased square pan,9x9x2,set aside. In medium mixing bowl combine flour,sugar,cocoa,baking soda and salt.Add
water,oil,vinegar and vanilla,stir until batter is smooth and well blended. Pour evenly over cherries. Bake 40-45 minutes or until cake tests done. Cool 10 minutes.
Invert onto serving plate.
