    Italian Cream Cake

    1 stick margarine
    1/2 cup shortening
    2 cups sugar
    5 egg yolks
    2 cups all purpose flour
    5 egg whites, stiffly beaten
    1 tsp baking soda
    1 cup buttermilk
    1 tsp vanilla
    1 small can coconut
    1 cup chopped nuts

    Cream first two. Add sugar and beat until smooth. Add egg yolks and beat well. Combine flour and soda and add to mix alternately with buttermilk. Stir in vanilla. Add coconut and nuts. Fold in egg whites. Pour into 3 round greased and floured pans. Bake at 350 for 25 minutes or until done.

    Cream Cheese Frosting
    double this for plenty of icing

    8 oz cream cheese
    1/2 stick margarine
    1 box powdered sugar
    1 tsp vanilla
    Chopped nuts

    Best 1st two until smooth. Add next two and beat until smooth. Sprinkle top with chopped nuts. Tip - use whole pecan halves and make whorls on the top.
