    Cherry Cheesecakes

    (Use regular size muffin pans for this one.) Yield: about 24

    2 8 oz. pkgs. Cream Cheese
    3/4 cup Sugar
    2 Eggs
    2 Tbsp. Lemon uice
    1 tsp. Vanilla
    Cream first five ingredients and set aside.

    24 Vanilla Wafers
    1 21 oz. can Cherry Pie Filling
    1 tsp. Almond Extract, mixed thoroughly in the pie filling

    (Use regular size muffin pans for this one.) Yield: about 24

    2 8 oz. pkgs. Cream Cheese
    3/4 cup Sugar
    2 Eggs
    2 Tbsp. Lemon uice
    1 tsp. Vanilla
    Cream first five ingredients and set aside.

    24 Vanilla Wafers
    1 21 oz. can Cherry Pie Filling
    1 tsp. Almond Extract, mixed thoroughly in the pie filling

    Place a vanilla wafer in bottom of each paper-lined muffin cup. Fill muffin cups 2/3 full with the cream cheese mixture. Bake at 385 degrees for 15 to 20 minutes. Remove from oven and top with the cherry pie filling mixture.

    These look pretty and colorful on a footed cake stand. (I always add the almond flavoring to cherry and blackberry pies to boost up the flavor.)
