    Chocolate Oreo Cheesecake

    Crust:
    1 cup (13 cookies) crushed Oreo cream cookies
    Press 1 cup of crushed cookies in the bottom of a 9" springform pan. Cut a piece of parchment paper to fit the bottom of the pan.

    Filling:
    4- 8 oz. pkgs. cream cheese, softened
    1 cup white sugar
    1 tsp. Vanilla
    4 eggs
    20 Oreo cookies, quartered

    Mix the cream cheese, sugar, and vanilla on medium speed until well blended. Add the eggs on low speed just until blended. With a spatula, gently stir in the quartered Oreo cookies. Pour the filling over the crust. Bake at 325 degrees if using a metal spring form pan, or at 300 if using a non-stick pan. Bake 1 hour 5 minutes or til center is almost set. Upon removal from the oven, run a knife around the cake to loosen. Let cool in pan, then remove bottom and refrigerate overnight. The cheesecake can be garnished with whipped topping, raspberries or cherries
