    Lemon Delicious



    Definitely to be rated one of the world best comfort foods. It's tart, refreshing flavour and the creamy sauce that develops under a feather like sponge, makes it an all time favourite. It can be done speedily by doing the initial creaming and blending in a food processsor.

    Ingredients:

    60g (2 oz) butter, softened
    1 cup (7 oz ) caster sugar
    3 eggs, separated

    2 tsp finely grated lemon rind
    1/2 cup (4 floz) lemon juice
    1/3 cup (1 1/2 oz) plain (all purpose) flour, sifted
    1 3/4 cups (14 floz) milk
    1/8 tsp salt
    Method:


    1. Set aside 1/4 cup (2 oz) sugar. Cream the butter and the remaining sugar until light. Add the egg yolks one at a time, incorporating the first before adding the next.

    2. Beat in the lemon rind, and then the lemon juice. If using a processor, stop at this stage and transfer the mixture to a bowl. Fold in the flour and milk alternately giving a very loose mixture.

    3. In a clean bowl mix the egg whites and salt until stiff peaks form. Add the reserved sugar and whisk until thick and glossy. Gently fold into the flour mixture. Do not over mix.

    4. Butter a deep 6 cup (48 floz) baking dish or souffle dish and dust with caster sugar, tipping out the excess. Pour the lemon mixture into the dish and place it in a roasting pan with hot water to come half way up the side of the dish.

    5. Bake in an oven preheated to 180C (350F) for 30-35 mins or until risen and golden. Serve warm.
