    Chocolate Truffle Cookies

    4 squares unsweetened chocolate
    2 c semisweet choclate chips, divided
    1/3 c butter
    1 c sugar
    3 eggs
    1 1/2 t vanilla
    1/2 c flour
    2 T cocoa
    1/4 t baking powder
    1/4 t salt
    confectioners sugar


    Recipe
    1. Melt the unsweetended chocolate, 1 c of the chocolate chips and butter in a double boiler or in the microwave.
    2. Cool for 10 min.
    3. In a mixing bowl, beat the sugar and the eggs for 2 min.
    4. Beat in the vanilla and the chocolate mixture.
    5. Combine the flour, cocoa, baking powder and salt.
    6. Beat dry ingredients into chocolate mixture.
    7. Stir in remaining chocolate chips.
    8. Cover and refrigerate for at least 3 hr.
    9. Remove 1 c of dough.
    10. With lightly floured hands, roll dough into 1 inch balls.
    11. Place onto an ungreased baking sheet.
    12. Bake at 350 degrees for 10 to 12 min or until puffed and set.
    13. Cool on the pan for 3 to 4 min before removing to a wire rack to cool completely.
    14. Repeat process with remaining dough.
    15. Dust cooled cookies with the confectioners sugar.
    Makes 4 dozen.
