    Holiday Meringue Cookies

    2 egg whites
    Dash salt
    1/8 tsp cream of tartar
    3/4 c sugar
    1/2 tsp vanilla
    1 c miniature chocolate chips
    1 c chopped walnuts
    4 Tbsp crushed peppermint candy

    Beat egg whites in small mixer bowl at high speed until foamy. Add cream of tartar and salt; beat to form soft peaks. Add sugar, 1 Tbsp at a time, beating after each addition. Meringue should be stiff and shiny. Fold in vanilla, chocolate chips, and nuts. Drop by teaspoonfuls onto lightly greased cookie sheets, leaving about 1 1/2" space between cookies. Sprinkle with candy. Bake 40 minutes at 250�. Cool on wire racks. Store in airtight container. Makes 3 dozen
