    French Coconut Pie
    4 tablespoons (1/2 stick) butter
    2 eggs, beaten
    1 tablespoon all-purpose flour
    ¾ cup sugar
    1 cup or 3 1/2 –ounce can shredded sweetened coconut
    1 cup milk
    One 9-inch unbaked pie shell

    French Coconut Pie

    Preheat oven to 400 degrees. Melt butter; add remaining ingredients. Pour into pie shell. Bake until firm, about 45 to 60 minutes.

    Yield: 6 to 8 servings
