    Pears Sabayon

    4 egg yolks
    1-cup confectioners sugar
    Dash salt
    ¼ cup sherry
    ¾ cup heavy cream
    1 ½ tablespoon sugar
    1 large can pears, chilled

    Beat the egg yolks with sugar, salt and wine in a saucepan or top of double boiler. Beat until smooth. Cook for 8-10 minutes or until sauce thickens. Stirring constantly. Remove from heat; let cool. Whip cream and 1 ½ tablespoons of sugar in separate bowl until it holds peaks. When sauce is completely cooled, gently fold in whipped cream. Serve over chilled drained pears. Quick and easy cool dessert.


    Yield: 4 servings
