    Corn and Crab Chowder


    List of Ingredients

    1 Tbls. oil
    2 Tbls. margarine
    2 potatoes; peeled and diced
    2 ribs celery chopped*
    1 onion chopped
    1 small red pepper seeded and diced
    1 bay leaf
    salt and pepper to taste
    1 Tbls. Old Bay Seasoning
    3 Tbls. flour
    2 cups chicken broth
    1 qt milk
    3 cups corn frozen
    1 pkg imitation crab meat shredded
    4 Bread bowls 6" ones





    Instructions
    Heat a large soup kettle; add oil and butter.

    Add in chopped vegetables.

    Add in bay leaf.

    Season veggies with salt, pepper and Old Bay. Saute 5 minutes.

    Sprinkle flour on top and cook 2 minutes stirring constantly.

    Stir in broth and combine through.

    Stir in milk. Bring to a bubble and add corn and crab.

    Taste to adjust seasonings if needed.

    Remove bay leaf

    Serve in bowls or bread bowls.

    You can garnish with oyster crackers, hot sauce and/or scallions if desired.
