    Apple Glazed Carrots

    I tablespoon butter
    1 pound baby carrots
    1 cup apple cider or apple juice
    1 teaspoon honey
    1 teaspoon green onion, minced


    Melt butter in a nonstick skillet over medium heat.
    Add carrots and saute until carrots begin to brown slightly, about 8 minutes.
    Add apple juice and honey and bring to a boil.
    Reduce heat and simmer until carrots are tender and liquid is reduced to a glaze, stirring occasionally, about 15 minutes.
    Transfer to a bowl, sprinkle with green onion tops and serve.
    Makes 4 servings at 105 calories each.
