    APPLE STUFFED ACORN SQUASH

    2 medium Acorn squash
    2 Golden Delicious Apples, or any other baking variety
    1/4 cup white wine or water
    1/4 cup Sugar
    1/2 teaspoon Cinnamon
    2 tablespoons Butter
    4 teaspoons ground almonds

    Preheat the oven to 350 degrees F. Put about 1 inch of water in a baking dish. Set aside.


    Wash the Acorn squash and cut them in half. Scoop out the seeds and slice a thin piece off of the bottom of each half, being careful not to make a hole in the squash. (This slice will give the Squash a flat base so it will sit upright in the baking dish.) Place the squash in the baking dish and set aside.



    Peel and core the Apples and cut into thin slices.


    In a large skillet, combine the wine or water and the Sugar over moderate heat. Add the apples and cook until they are crisp-tender and the liquid is slightly reduced, about 2 minutes. Sprinkle the Cinnamon on top of the Apples, swirl in the Butter and continue to cook until the sauce is thick, about 2 to 3 minutes.


    Place an equal portion of the apple mixture into each of the 4 squash halves and bake until a knife easily pierces the meat of the Squash, about 1 hour. With 10 minutes to cook, sprinkle 1 teaspoon of the Almonds on top of the apple mixture in each squash half.
