    Green beans with slivered almonds

    3 large handfuls Fresh green beans, preferably Blue Lakes
    1/3 Red onion
    1 handful Slivered almonds
    2 Tablespoons Extra-Virgin olive oil
    2 teaspoons Sherry vinegar
    Salt and pepper to taste

    Rinse the green beans and cut into 1-� lengths on a diagonal.

    Drop them into lightly salted boiling water for 2 or 3 minutes, just enough to soften them, then rinse under cold water to keep the bright green color; let them dry.

    Slice the red onion paper thin into half rounds and soak in cold water for a few minutes to mellow the flavor. Drain.

    Toast the slivered almonds in a dry, Teflon coated pan until browned; set aside.

    Mix the onion, toasted almonds, a little olive oil, and a few dashes of the sherry vinegar in a serving dish.

    Heat olive oil in a pan, and when hot, add the blanched green beans and saut� until they've picked up a bit of brown. Now add the hot beans to the serving dish, add a few pinches of salt and pepper, and mix well. Serve chilled.
