    Potato Puffs ^

    1/2 cup flour
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 cup rich mashed potatoes
    1 egg
    1 teaspoon chopped parsley

    Sift flour, baking powder and salt; add to mashed potatoes, then add lightly beaten egg and parsley. Drop small teaspoonfuls in deep hot fat and brown. Have a bowl of cold water handy and dip spoon into it before dipping potatoes. These may be frozen and reheated in oven.
