    Roasted Potato Wedges

    Ingredients:
    4 potatoes, peeled
    1 Tbsp olive oil
    .5-1 tsp Kosher salt

    Cut potatoes into wedges. Pour oil and salt into a medium size bowl. Toss wedges in oil. Place on a jellyroll pan and roast at 425 degrees F. for 25 minutes. Raise the oven temperature to 475 degrees F. and brown the potatoes for about 5 minutes.

    Makes 4 servings
