Apricot Honey Chicken
4 boneless, skinless chicken breasts
1 T oil
3 T. apricot preserves
2 T orange juice
4 t honey
1. In a skillet, cook the chicken in the oil over med heat fo 7 to 9 min on each side or until done.
2. Combine the preserves, orange juice and honey.
3. Pour over the chicken and cook for 2 min or until heated through.
4. Remove chicken to serving platter.
5. Reduce sauce slightly.
