Indian Ginger Chicken
(Serves 4)
chicken
2 tsp lemon juice
salt and pepper to taste
green celery leaves, whole
1 to 2 carrots
half a liter of yoghurt
2 to 3 tsp of a mix of garlic and ground ginger
1 tsp Curcuma curry (optional)
whole coriander seed (optional)
butter
1 egg yolk
flour or tapioca

Indian Ginger Chicken
Thoroughly mix yoghurt, garlic, ginger and curry, salt and pepper (soft!) let sit for 30 minutes; cut chicken into chunks, marinade in lemon juice for 30 minutes.
Put meat in pot, cover with whole celery leaves and carrots, pour over yoghurt with coriander seed mixed in, and let simmer until tender. Watch out: the yoghurt in the pot is thicker than water, it will char at the bottom if you do not use the lowest heat; or do it in a covered casserole in the oven. Takes about 45 minutes. When done, discard celery leaves and carrots, add fresh ginger, lemon and butter to taste, thicken with yolk and tapioca, and let simmer for 5 minutes. Serve with parsley rice. This dish will taste pleasantly sour because of yoghurt and lemon. The butter in the end is necessary as fat is commonly the best taste carrier.
