    Made this for Easter 2013, my first atempt at a cheese cake and it was wonderful, not too sweet

    List of Ingredients




    3 lbs Ricotta Cheese
    8 eggs
    1 1/8 cups sugar
    Zest of one lemon
    zest of one orange
    Butter for coating bottom and sides of pan
    Powder sugar for dusting

    Recipe



    In a bowl mix together all the ingredients very well, use Kitchen Aid
    Coat the bottom and sides of a 9" springform pan with butter lightly
    Pour the mix into the springform pan
    Bake for 30 minutes at 425 F then continue baking for an additional 40 minutes at 380F
    Let it cool and serve
    Powder sugar top if you like
