We ate this in a local restaurant for Father's Day, I came home and replicated it
List of Ingredients
Oil for the pan
1 onion chopped
1 garlic chopped
1 green pepper chopped
2 tomatoes chopped
almonds or pinoli nuts
raisins
salt & pepper
Sugar
parsley
6 very small eggplants trimmed and cut in half lengthwise
Recipe
In frying pan put oil, sauté onion, pepper and garlic till soft, add tomatoes, raisins, nuts, salt, pepper and a handful of sugar and parsley. Cook down till all the moisture from the tomatoes is gone.
In the mean time spray a cookie sheet with Pam put sliced eggplants on sheet, spray eggplants with Pam spray and bake at 450 degrees for 30 minutes or until nice and soft.
When eggplant is done scoop out the meat and add to the pepper tomatoes mixture.Stuff eggplants shells. Chill eggplants and then serve
Can be served at room temp or heated
