Zucchini Parmesan

Just like my eggplant parm but using zucchini
List of Ingredients
- (3) Zucchini sliced into rounds
- 1 1/2 cups approx. flour
- Oil to coat pan for frying 1/2 inch high
- (3) eggs
- (2) cups mozzarella cheese shredded
- salt and pepper
- (1) 15 oz. can tomato sauce
Instructions
- Wash and slice zucchini, add a tablespoon of water to eggs, beat. Dip zucchini into egg mixture then flour
- Add rounds to frying pan, fry till golden on each side. Put a thin layer of tomato sauce on bottom of corning ware pan. Layer the rounds of zucchini with sauce and cheese, salt and pepper
- When all done frying put a layer of cheese on top. Bake at 350 degrees for 30 - 40 minutes or until bubbly.
- Serves 5
