    FRIED POUNDCAKE A LA MODE

    Fry cake????This is one of those recipes that you find yourself saying . . . "Who would have guessed?". It is a very simplistic and elegant dessert, full of delicate richnesses and unique flavors.This recipe serves eight:


    List of Ingredients


    • 1 ea. 16 oz. Poundcake.
    • 4 T. Sweet (unsalted) butter.
    • 1 pint Peach, strawberries & cream, or pralines & cream ice cream.


    Instructions


    1. Carefully remove a thin slice from each end of the poundcake, toss down YOUR hatch, and slice the rest of the cake crosswise into eight equal servings. Lay the slices flat on a sheet of waxed paper.
    2. Melt the butter over low heat, being careful not to let it separate.
    3. Heat a flat, teflon-coated grill over medium heat until a drop of water sprinkled on it dances.
    4. Lightly brush the top side of each cake slice with the butter and place them butter-side- down on the grill. While they fry, brush the remaining butter on the reverse sides of the cake.
    5. As soon as the first side is moderately browned, flip the slices over and brown the remaining side.
    6. Slip a slice of the fried cake onto a pie plate, place a scoop of ice cream on top and serve while the cake is still warm.


    Final Comments


    If you have a tabletop burner, this is one of those recipies that goes great done at the table for a brunch or party. The smell of the frying cake slices is particularly inviting to your guests.
