    Upside-Down Pineapple Cake

    List of Ingredients


    • 1/4 cup butter
    • 2/3 cup brown sugar (firmly packed)
    • 1 can slice pineapple-drained
    • cherries if desired
    • 1 1/3 cup flour
    • 1 cup sugar
    • 1/3 cup shortening
    • 3/4 cup milk
    • 1 1/2 tsp baking powder
    • 1/2 tsp salt
    • 1 egg


    Instructions


    1. Heat oven to 350
    2. Heat margarine in 10 inch ovenproof skillet or square pan, 9x9x2 in oven until melted
    3. Sprinkle brown sugar over margarine, arrange pineapple slices on top. Place a cherry in center of each pineapple slice
    4. Beat remaining ingredients in a large bowl on low speed for 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally
    5. Pour over fruit in skillet or pan, spread evenly
    6. Bake until a wooden pick inserted in the center comes out clean, skillet 45 to 50 minutes, square pan 55-60 minutes.
    7. Immediately turn the skillet or pan upside down on heatproof plate. Let the skillet or pan remain over the cake for a few minutes. Serve warm, and if you like, with sweetened whipped cream.
