    Banana Macaroon Trifle

    List of Ingredients


    • 2 TBLS butter, softened
    • 1 cup sugar
    • 1 egg
    • 1 cup coconut
    • 1/2 cup oats
    • 2 TBLS flour
    • 1 tsp baking powder
    • 1/4 cup milk
    • 1 tsp vanilla
    • 3 to 4 small bananas, sliced
    • 1 TBLS pineapple juice
    • 2 cups sweetened whipped cream
    • cinnamon


    Instructions


    1. Beat butter and sugar until well blended.

    2. Add egg and mix well.

    3. Combine coconut, oats, flour and baking powder.

    4. Combine milk and vanilla and add to sugar mixture alternately with coconut mixture.

    5. Spread into a greased 13x9 pan.

    6. Bake at 325 degrees for 25 to 30 minutes or until edges are golden brown.

    7. Cool completely and crumble.

    8. Set aside 1/4 cup of mixture for topping.

    9. Just before serving, toss bananas with pineapple juice.

    10. Layer a third of the macaroon crumbles, whipped cream and bananas.

    11. Repeat layers, sprinkling top with reserved macaroon crumbs.

    12. Sprinkle each serving with cinnamon to serve.
