    My mom loves lemon meringue pie. This recipe has turned out to be one of her favorites.


    List of Ingredients


    • 1 cup sugar
    • 1/2 cup flour
    • 2 cups buttermilk
    • 1/2 cup water
    • 3 egg yolks, beaten lightly
    • 6 Tablespoons fresh lemon juice
    • 2 Tablespoons butter
    • 3 egg whites
    • 6 Tablespoons sugar
    • 1 baked pie shell


    Instructions


    1. In a saucepan, combine 1 cup sugar and flour.
    2. Stir in the buttermilk and water until smooth.
    3. Cook and stir over medium heat until thickened and bubbly, about 4 minutes.
    4. Reduce heat and stir for 2 more minutes.
    5. Remove from the heat.
    6. Temper the egg yolks and return to mixture in the saucepan.
    7. Bring to a gentle boil; cook and stir for 2 more minutes.
    8. Remove from the heat.
    9. Stir in the lemon juice and butter until butter is melted.Set aside.
    10. Beat the egg whites with a blender on medium speed until soft peaks form.
    11. Gradually beat in the 6 Tablespoons of sugar, 1 Tablespoon at a time until stiff peaks form on high speed.
    12. Pour the hot filling into the prepared pie shell.
    13. Spread meringue over the top of filling, making sure to seal to the edges.
    14. Bake in a 350 degree oven for 15 minutes or until meringue is golden brown.
    15. Cool for 1 hour on a wire rack.
    16. Refrigerate for at least 5 hours before serving.
