    Wild Rice w/ Carmelized Onions

    List of Ingredients


    • 2 cups chicken broth
    • 1/2 cup uncooked brown rice
    • 1/2 cup uncooked wild rice
    • 3 TBLS butter
    • 3 medium onions, cut into thin wedges
    • 2 tsp brown sugar
    • 1 cup dried cranberries
    • 1/2 tsp orange peel, grated


    Instructions


    1. In a saucepan, combine the broth and rices and bring to a boil over medim high heat;then, reduce to low, simmering for 45 minutes or until rice is tender and liquid is absorbed.
    2. Meanwhile, melt butter in skillet over medium high heat.
    3. Add onions and brown sugar, cooking for 6 minutes or unitl any liquid is absorbed and onions are soft.
    4. Reduce heat to low and slowly cook onions, stirring often, for 25 minutes or until onions ae caramel in color.
    5. Stir in cranberries and cook over low heat until cranberries swell, about 10 minutes.
    6. Gently fold this mixture and orange peel into rice to serve.
