    4 cups of dried pinto beans
    8 cups of water
    1/2 pound of salt pork
    2 to 4 tablespoons of chili powder, depending on your taste
    1/4 to 1/2 teaspoon of hot pepper sauce, also depending on your taste salt for taste

    Bring the beans and water to a boil. Remove from the heat, cover, and let it stand for 1 hour. Add the salt pork and simmer, covered for 1 1/2 to 2 hours or until the beans are tender and the water is almost absorbed. While the beans are cooking, remove scum from the top and stir occasionally. Remove the salt pork and stir in enough chili powder, hot pepper sauce, and salt to give the beans a spicy flavor. Beans can be prepared ahead of time and reheated.

    Makes 10 to 12 servings.
