    1 English muffin
    1 2 to 2½-inch diameter biscuit cutter or glass
    Butter or margarine as desired, at room temperature
    About 1 ounce bulk pork sausage or reduced-fat or pork and chicken or turkey sausage, or bulk chicken or turkey sausage, or 1 slice Canadian bacon or fully-cooked smoked ham cut into a 2 to 2½-inch diameter circle
    1 egg (see note)
    About 1 to 2 tablespoons shredded sharp Cheddar cheese
    Sprigs of parsley or thyme for garnish

    Do not separate English muffin into halves; with a 2 to 2½-inch biscuit cutter, cut out a hole in the center. Lightly brush the top and bottom of the muffin with butter or margarine. Separate the muffin "hole" into two halves; brush each, both sides, with butter. Press sausage or Canadian bacon or ham into the cavity remaining in the muffin; arrange on a greased baking sheet or greased aluminum foil-lined baking sheet and bake in a preheated moderate oven (350 degrees F.) for 5 to 7 minutes. Press absorbent paper onto sausage or Canadian bacon or ham to remove excess fat. Arrange buttered "holes" on baking sheet. Break egg into muffin cavity; loosely cover with aluminum foil, and continue to bake about 8 minutes or until egg white is quite firm and holes are lightly toasted. Sprinkle cheese over egg and continue baking, uncovered, for about 5 minutes until cheese is melted. Garnish serving with a sprig of parsley or thyme and accompany with toasted "holes".

    Serves 1.
