1 medium orange
1 cup raisins
1/2 cup butter, softened
1 cup granulated sugar
1 large egg
2 cups all purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
Glaze:
2 Tbsp. reserved orange juice
1 1/2 cups confectioner's sugar
Recipe
Cut unpeeled orange in quarters. Squeeze 2 Tbsp. of orange juice into cup and set aside for glaze. Put orange pieces (with peel) and raisins through food grinder.
Cream butter and sugar together. Add egg and beat well. Add flour, baking powder and salt. Stir in raisin mixture. Batter will be stiff. Press in greased 9 x 13 inch pan. Bake in 350 degree oven for about 25 minutes.
Glaze:
Mix orange juice and confectioner's sugar well, adding more confectioner's sugar or orange juice to make a barely pourable glaze. Spread on squares that are still warm. Allow to set before cutting. Cuts into 54 squares.
