    Busy-Day Lemon Cheesecake

    List of Ingredients




    2 cups graham cracker crumbs
    3 tbsp. sugar
    1/4 cup margarine, melted
    Mix, and reserve 1/2 cup crumbs. Press remaining crumbs in bottom of 8-inch square dish.

    8 oz. cream cheese, softened
    1/2 cup milk
    Beat together until smooth.

    another 1 1/2 cups milk
    1 (3 1/2 oz.) pkg. instanr lemon pudding
    Add, beating slowly, just until well mixed-about 1 minute.Do not overbeat. Pour into crust.

    Sprinkle reserved crumbs over the top. Chill at least 1 hour before serving




    Variations: Fold 2 cups Cool Whip, with 1/2 tsp. lemon flavoring added, into pudding mixture before poring into crust. This makes a nice, light cheesecake
