    Armenda's Chicken Chili

    List of Ingredients




    4 cooked chicken breasts, chopped
    2 cans NSA diced tomatoes
    1 can NSA diced tomatoes w/ chilies (Rotel)
    2 small cans NSA tomato sauce
    1 large onion, chopped
    2 bell peppers, chopped
    3 cloves garlic, pressed
    4 T Chili Powder
    1 T Cumin
    2 Bay leaves
    ½ t Cayenne pepper
    2 T Splenda (or brown sugar substitute)

    Recipe



    Boil and cut chicken breast and set aside. Sauté onions, peppers and garlic in skillet with lid on to preserve moisture, stirring occasionally. Set aside. In large pot, combine tomato products, spices and sweetener. Bring to light boil and reduce to a simmer. Add onion mixture and chicken. Cover and let simmer 30 minutes. Enjoy. Reheated leftover’s next day are even better.
