    CHINESE FRIED RICE

    List of Ingredients




    3 cups cold cooked rice
    3 Tblsp peanut or other cooking oil
    1/2 cup julienne strips of lean cooked roast pork or ham
    4 scallions, minced (white part only)
    1/4 cup chicken broth
    1 Tblsp soy sauce
    1/4 tsp sugar
    1/8 tsp pepper


    Recipe



    Stir-fry rice in oil in a large, heavy skillet over moderate heat, pressing out any lumps, until pale golden. Add pork and scallions and stir fry 1 minute. Add remaining ingredients, cover and heat 1 minute. Serve very hot.


    Makes 4 servings.


    VARIATIONS:
    Chinese Fried Eggs and Rice:
    Stir fry rice, pork and scallions as directed, then push to side of skillet; omit broth but add 1 or 2 lightly beaten eggs; scramble lightly, then mix into rice along with soy sauce, sugar, and pepper.
